What's For Dinner?

People are always curious as to what Emily and I are eating as vegetarians. I think in their minds they picture us munching away on celery sticks and carrots with possibly a plate of steaming veggies for supper. Definitely a salad! They're sure we have no butter or sugar in our diet at all. Well, they couldn't be more wrong. 

When Emily was in her early twenties, she would go away on these retreats with the Church at a camp during the Summer. Being a vegetarian, they assured her there would be equal meals for her as well. While they had mostaccioli with meatballs, she would have an iceberg salad with a few tomatoes. Next day, they're having burgers or tacos and Emily would have the lettuce, cheese on a burger. Somehow, that's not how she pictured her vegetarian meals that they promised. Sadly, she stopped going after two Summers. She was just way too hungry. 

For some reason, people have the wrong misconception what a vegetarian lifestyle looks like, so we will fix all that. First of all, we eat pretty darn good. We prepare all our own meals and for people that are rushed, this might not be for you. Or you could work around it by spending a day making all your meals for the week. We still use butter, real butter, not margarine. The same goes for sugar, except we limit how much goes into every meal. You would be surprised how much sugar and salt there is in recipes or in restaurants that aren't needed. 

This morning, I had oatmeal with cinnamon, walnuts, pecans and cranberry/raisins. I always add some milk on top. We don't use whole milk. You could add in almond, coconut, skim, or 1% milk.  It was delicious and very filling. A lot of food out there is not filling and suddenly you're hungry again. Whenever I have some left over, I take it to work for lunch. 

Usually, we eat Supper around 5 in the afternoon, but today we decided to have a treat and eat out. Now, we basically have two restaurants that we really like and even then, it's rarely that we go there. It's either Olive Garden or Red Lobster, because they both have a great variety for us to choose from their menu. I guess you can tell how much we love, love fish and shellfish. We had a lovely meal and truly enjoyed ourselves. A treat such as this one doesn't happen too often, but when it does, we are grateful.
